Pasta Primavera With Smoked Gouda - cooking recipe

Ingredients
    16 ounces penne pasta
    2 tablespoons olive oil
    2 zucchini, sliced
    1 green pepper, diced
    2 carrots, diced
    8 ounces mushrooms
    3 small onions, diced
    3 garlic cloves, minced
    1 (14 1/2 ounce) can stewed tomatoes
    1 cup chicken broth
    2 tablespoons chopped parsley
    1/2 teaspoon basil
    1/2 teaspoon oregano
    1/2 teaspoon red pepper flakes
    2 tablespoons grated parmesan cheese
    2/3 cup shredded smoked gouda cheese
Preparation
    Cook pasta according to direction on package.
    Heat olive oil in skillet. Add vegetables and saute until translucent (5 minutes).
    Add garlic and cook 1 minute.
    Stir in tomatoes, chicken broth, parsley, basil, oregano, pepper flakes.
    Bring to a boil. Reduce heat and simmer until sauce thickens.
    Stir in cooked pasta and heat through.
    Garnish with parmesan and gouda cheese.
