Flax Bread Without Yeast, Gluten, Sugar Or Dairy - cooking recipe

Ingredients
    100 g flax seed meal (preferably fresh ground)
    120 g buckwheat flour
    60 g rice flour
    1 teaspoon baking powder (rounded)
    1 teaspoon baking soda (rounded)
    2 teaspoons xanthan gum
    3 tablespoons oil
    3 eggs
    1/2 cup soymilk
    1 tablespoon lemon juice
Preparation
    Preheat oven to 180\u00b0C or 350\u00b0F Grease a small loaf pan (about 4\" x 7\" or 10cm x 18cm).
    Mix together the flax meal, buckwheat flour, rice flour, baking powder, baking soda and xanthan gum. The xanthan gum gives it a bit better texture, but could be eliminated.
    In a separate bowl, beat the eggs and add the oil, soy milk and lemon juice.
    Once the oven is to temperature, mix the wet and dry ingredients together, put in the pan, smoothing the top with a spatula. (The lemon juice acts with the baking powder, and it's best to mix it, then go right into the oven.).
    Bake for 35-40 minutes.
