Whole Wheat Pasta Salad With Chicken - cooking recipe
Ingredients

4 chicken breasts, cooked and chopped (about 1lb.)
8 ounces whole wheat pasta, cooked and cooled
1 cup cherry tomatoes, halved
1/2 cucumber, chopped
4 ounces artichoke hearts (reserve marinade for dressing)
DRESSING
1 shallot, minced
7 ounces plain Greek yogurt
2 tablespoons reserved artichoke marinade
Preparation

1. In a large bowl, combine the first 5 ingredients.
2. In a small bowl, combine the dressing ingredients and stir well. Pour over the salad and toss.
3. Enjoy!
