Ingredients

2 1/2 cups flour
1 1/2 cups sugar
3/4 cup coconut
1 cup butter, softened
2 eggs
1 1/2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon lemon juice
1/2 teaspoon grated lemon rind
Preparation

Combine all ingredients. Beat at low speed until well mixed, 2 to 4 minutes.
Drop rounded teaspoonfuls of dough onto ungreased cookie sheets.
Bake at 400 degrees for 7 to 10 minutes or until edges are lightly browned.
