Ingredients

4 tablespoons butter
2 tablespoons vegetable oil
2 lbs onions
1 teaspoon salt
3 tablespoons flour
32 ounces beef broth
32 ounces chicken broth
1 beef bouillon cube
1 loaf French bread
1/2 lb swiss cheese
Preparation

Slice onions as thinly as possible.
Melt butter and oil over low heat in large dutch oven or soup pot.
Brown onions slowly until golden brown. This step should take 20-30 minutes.
Sprinkle with flour, cook and stir 2-3 minutes.
Add broths and bouillon cube.
Simmer partially covered for 45 minute.
Top with toasted french bread and Swiss cheese and melt under broiler.
