Macadamia-Parmesan Sole - cooking recipe

Ingredients
    3/4 c. grated Parmesan
    2 Tbsp. all-purpose flour
    4 (4 oz.) sole fillets
    1 large egg, beaten
    2 to 3 Tbsp. butter
    1 to 2 Tbsp. oil
    1/2 c. finely chopped salted macadamia nuts, toasted
    garnishes: fresh parsley sprigs, lemon wedges
Preparation
    Combine cheese and flour; stir well.
    Dip fillets in beaten egg; dredge in cheese mixture.
    Combine butter and oil in a baking dish.
    Place fillets in dish, turning to coat.
    Sprinkle fillets with macadamia nuts.
    Bake uncovered at 425\u00b0 for 10 minutes or until fish flakes easily when tested with a fork.
    Remove fillets to a serving platter.
    Garnish.
    Serves 4.
