Opera Creams - cooking recipe

Ingredients
    3 1/2 lb. granulated sugar
    1 qt. whipping cream
    1/8 tsp. heaping cream of tartar
    1 1/2 tsp. vanilla
    1 1/2 c. chopped walnuts
Preparation
    Place in large kettle.
    Stir frequently to 258\u00b0.
    Pour on cold marble slab.
    Do not scrape kettle.
    Cool completely.
    Add vanilla and walnuts.
