Creamed Spinach - cooking recipe
Ingredients

2 lb. spinach, cooked and drained
3 shallots, minced
1 1/4 c. milk
3 Tbsp. cornstarch
1/4 tsp. nutmeg
1/2 c. pine nuts
3 Tbsp. oil or spinach water
Preparation

Saute shallots in oil or water until soft.
Add cornstarch to milk and stir until dissolved.
Pour over shallots, stirring constantly.
Add spinach and nutmeg.
Continue cooking over medium heat until thickened and heated through.
Garnish with pine nuts before serving.
