Hot German Potato Salad - cooking recipe
Ingredients

10 medium potatoes, boiled in skin
3/4 c. vinegar
3/4 c. sugar
2 eggs, beaten
2 Tbsp. parsley, chopped
salt and pepper to taste
8 slices bacon, diced
2 medium onions, diced
2 tsp. dry mustard
4 eggs, hard-cooked and sliced
Preparation

Peel and cube potatoes.
Put in ovenware bowl or casserole. Fry bacon; remove from pan.
Fry onions in bacon fat until tender but not brown.
Mix sugar and mustard.
Add onions in frying pan. Add beaten eggs and vinegar; cook until thickened, stirring constantly.
Pour over potatoes.
Add salt, pepper, bacon and egg slices.
Mix lightly.
Heat in a 250\u00b0 oven for 30 minutes. Sprinkle parsley on top.
