Eggplant Casserole - cooking recipe

Ingredients
    3 c. cooked and mashed eggplant
    2 large eggs, beaten
    1/2 can celery soup
    1/2 lb. Cheddar cheese, grated (save some for topping)
Preparation
    Place all ingredients except cheese in a large bowl.
    Beat well.
    Add part of the cheese and mix.
    Pour in casserole dish. Sprinkle top with cheese and paprika.
    Bake at 350\u00b0 until brown.
