Seafood Salad - cooking recipe

Ingredients
    1 (10 oz.) pkg. frozen, cooked shrimp, thawed
    8 oz. mushrooms, sliced
    1 medium onion, sliced in rings
    1/2 c. vegetable oil
    1 tsp. salt
    1 bay leaf
    1 tsp. snipped parsley
    1/2 lb. scallops, cooked and drained
    1 medium green pepper, cut 1/4-inch
    1 lemon, cut in wedges
    2/3 c. tarragon vinegar
    1 tsp. sugar
    1/8 tsp. dried tarragon leaves
    1 small head lettuce, torn
    salt and coarsely ground pepper
Preparation
    Mix shrimp, scallops, green pepper, mushrooms, lemon and onion in rectangular baking dish.
    Mix vinegar, oil, sugar, salt, tarragon and bay leaf.
    Pour over shrimp mixture.
    Cover and refrigerate 8 hours, spooning marinade over shrimp mixture occasionally. Remove bay leaf.
    Add lettuce and parsley to shrimp mixture.
    Toss salad.
    Season with salt and pepper.
