Pot Roast With Vegetables - cooking recipe

Ingredients
    3 Tbsp. oil (cooking)
    3 to 4 lb. rolled, boned beef chuck
    2 tsp. salt
    1/4 tsp. pepper
    1/2 c. water
    6 carrots, scraped and halved
    2 lb. white onions, peeled
    6 medium potatoes, pared and halved
Preparation
    Heat cooking oil in Dutch oven or heavy kettle with a cover. Add meat and brown well on all sides.
    Sprinkle with salt and pepper.
    Add water.
    Cover and simmer gently for 2 hours, turning roast several times for even cooking.
