Savory Stuffed Rib Roast - cooking recipe

Ingredients
    6 slices bacon
    1/4 c. chopped onion
    1 clove garlic, minced
    3 Tbsp. pimento-stuffed olives, chopped
    1 (4 to 5 lb.) boneless beef rib roast
Preparation
    Crisp cook and crumble bacon. Drain, reserving 1 tablespoon of drippings.
    Set bacon aside. Cook onion and garlic in reserved drippings until tender. Remove from heat.
    Stir in olives and bacon.
    Unroll roast; spread bacon mixture over meat.
    Re-roll roast.
    Tie securely.
    Place meat, fat side up, on a rack in a shallow roasting pan. Sprinkle with a little salt and pepper. Insert a meat thermometer.
    Roast at 325\u00b0 for 2 1/2 to 3 hours for rare or until thermometer reads 140\u00b0.
    Let roast stand, covered with foil, about 15 minutes before removing strings and carving.
