Spicy Gazpacho - cooking recipe
Ingredients

3 tomatoes, chopped
1 cucumber, chopped
1 green pepper, chopped
1 onion, chopped
3/4 c. fresh parsley, chopped
2 clove garlic, minced
3 1/2 c. liquid Bloody Mary mix
1/4 c. white wine vinegar
1/4 c. olive oil
1/2 tsp. salt
1/4 tsp. ground black pepper
Preparation

In a large bowl, combine first 6 ingredients.
In a separate bowl, use a wire whisk to blend remaining ingredients.
Add liquid to vegetable mixture, stirring to combine.
Cover and refrigerate at least 2 hours before serving.
Serve cold.
Store in airtight container in refrigerator.
Yields:
about 8 cups of soup.
