Ole West Chicken - cooking recipe
Ingredients

6 boneless chicken breasts (if very big, cut in half) or 6 pork chops
3 Tbsp. oil
1 large onion, sliced
2 Tbsp. chili powder
1 green bell pepper, chopped
1 c. uncooked rice
1 (8 oz.) can tomato sauce
1 1/2 c. water
2 tsp. salt (I only used 1)
Preparation

Brown chicken or pork chops in oil in heavy pan or skillet. Remove and add onions.
Remove and stir in chili powder.
Add pepper slices, rice, tomato sauce, water and salt.
Bring to a boil.
Pour into a large casserole dish.
Place chicken or pork and onion slices on top of rice mixture.
Cover and cook at 375\u00b0 for 1 hour or until liquid is absorbed.
