Stuffed Zucchini - cooking recipe

Ingredients
    3 medium zucchini
    2 Tbsp. butter
    1 c. chopped fresh mushrooms
    2 Tbsp. flour
    1/4 tsp. oregano
    1 c. shredded Monterey Jack
    2 Tbsp. pimento
    1/4 c. Parmesan
Preparation
    Cook whole zucchini in salted water for 10 minutes; drain.
    Cut in half lengthwise.
    Scoop out center, leaving 1/4-inch shell. Chop center portion and set aside.
    Melt butter in large saucepan. Saute mushrooms about 3 minutes.
    Add flour and oregano; remove from heat.
    Stir in Monterey Jack cheese and pimentos.
    Stir in reserved zucchini.
    Fill zucchini with mixture and sprinkle with Parmesan cheese.
    Broil for 3 to 5 minutes.
