Ingredients

3 or 4 medium carrots, cut in thick slices
1/4 c. water
1/4 c. brown sugar
2 Tbsp. orange juice
1 Tbsp. grated orange rind
1 1/2 Tbsp. margarine
1/2 tsp. ground ginger
Preparation

Place carrots and water in casserole; cover with tight lid or plastic wrap.
Microwave on High 100% for 6 to 8 minutes or until tender.
Allow to stand 5 minutes, then drain.
Combine remaining ingredients in a cup and microwave on High for 2 minutes, until hot and bubbly.
Pour over carrots and cover.
Microwave for 1 to 2 minutes, until heated through on High.
Serves 2 or 3 persons.
