Mushroom-Barley Casserole - cooking recipe

Ingredients
    4 Tbsp. butter
    1 c. coarsely chopped onion
    2 garlic cloves, minced
    3 c. sliced mushrooms
    3/4 c. barley
    1 1/2 c. beef or chicken stock
    1/2 tsp. salt
    1/8 tsp. pepper
    3 Tbsp. minced fresh parsley
Preparation
    Melt butter in skillet.
    Add onions and garlic.
    Cook 5 minutes and add mushrooms and barley.
    Cook 10 minutes until barley starts to brown.
    Stir in the stock, salt and pepper; transfer to a buttered casserole dish.
    Bake in a preheated 375\u00b0 oven for 45 to 60 minutes.
    Stir in parsley.
    Serves 4 to 6.
