Eggplant Cheese Fritters - cooking recipe

Ingredients
    sliced eggplant
    5 or 6 eggs, separated
    oil
    water
    grated Romano cheese
    crackers, crushed
    tomato paste
Preparation
    Mix egg yolks with crackers.
    Beat egg whites.
    Dip eggplant in cheese, then crackers, cheese again and last egg white.
    Fry until golden brown.
    Add water to tomato paste to make a light sauce. Simmer eggplant slices in tomato sauce or serve with sour cream or plain yogurt.
