Junior Mint Cheesecake - cooking recipe
Ingredients

1 (6 oz.) pkg. Junior Mints
1 (3 oz.) pkg. cream cheese, softened
2/3 c. sugar
3 eggs
1 tsp. vanilla
graham cracker crust or chocolate
9-inch crumb crust (in spring-form pan)
Preparation

Place mints in freezer.
Preheat oven to 350\u00b0.
With electric mixer, beat the cream cheese and sugar until smooth.
Add eggs, one at a time, beating well after each addition.
Stir in vanilla. Pour into crust.
Chop mints; sprinkle onto cheesecake.
Bake for 40 to 45 minutes, or until just set.
Cool on wire rack, then chill several hours or overnight.
Makes 8 servings.
