Skillet Chicken Couscous - cooking recipe

Ingredients
    1 chicken breast, boned, skinned and diced
    1 c. fat-skimmed chicken broth
    1/2 c. apple or pineapple juice
    2 peaches or nectarines, diced
    1 large or 2 medium onions, chopped
    1 1/2 c. couscous
    3 Tbsp. minced fresh cilantro or parsley
    1 Tbsp. cumin seed
    2 tsp. curry powder
    1/4 tsp. ground cinnamon or apple pie spice
Preparation
    Coat a nonstick skillet with vegetable cooking spray.
    Arrange chicken cubes in a single layer.
    Brown chicken over moderate heat, turning to brown evenly.
    Stir in remaining ingredients. Cover tightly and turn heat to low.
    Simmer 3 or 4 minutes until most of the liquid is absorbed by the couscous.
    Remove from heat and keep tightly covered until served.
    Makes 4 servings.
