Ingredients

2 to 4 Tbsp. sugar
1 1/4 c. flour
1/2 tsp. salt
1 Tbsp. baking powder
1 c. milk
1/3 or 1/2 c. yogurt
1 tsp. vanilla
1 egg
2 Tbsp. oil (may use applesauce or a combination)
1/2 c. blueberries (optional)
Preparation

Combine sugar, flour, salt and baking powder.
Add milk, yogurt, vanilla, egg and oil.
Stir until mixed.
Do not overstir; batter will be lumpy.
Add blueberries, if desired.
Serves 2 to 4 people (I triple the recipe for my family).
