Golden Carrot Salad - cooking recipe
Ingredients

6 medium carrots, peeled and finely shredded
2 oranges, peeled and cut in segments or 1 (11 oz.) can mandarin oranges, drained
2 Tbsp. finely chopped parsley
1/2 c. orange juice
2 tsp. honey
lettuce
Preparation

In a serving bowl, toss together the carrots, orange segments and parsley.
Combine orange juice and honey and pour over salad. Serve in lettuce lined salad bowl.
Makes 4 to 6 servings.
Serve this salad with broiled chicken, roast duck or game.
