Cheesy Stuffed Eggplant - cooking recipe

Ingredients
    2 small eggplants
    1/2 lb. ground beef
    3 cloves garlic
    3 Tbsp. oil
    1 onion, finely chopped
    3/4 c. fresh parsley
    1 tsp. salt
    1 tomato
    1/2 tsp. whole oregano
    1 c. water
    1/4 lb. Cheddar cheese
Preparation
    Wash eggplants; cut in halves lengthwise.
    Remove pulp, leaving a 1/4 inch shell; set shells aside.
    Cut pulp into 1/2 inch cubes.
    Saute eggplant, beef, onion, tomato and garlic until beef is browned and onion is tender.
    Stir in parsley, salt, pepper and oregano.
