Mashed Potato Casserole - cooking recipe

Ingredients
    1 (28 oz.) bag mashed potatoes, prepared by directions (12 serving size)
    3/4 c. reduced-fat sour cream
    2 large eggs
    1 bunch chives, snipped (1/2 c.)
    1/2 tsp. salt and pepper
    1/2 c. sharp Cheddar cheese
Preparation
    Preheat oven to 375\u00b0.
    Lightly grease a 2-quart dish.
    Let potatoes cool slightly.
    Stir in all ingredients except cheese. Spread in casserole dish.
    Bake, uncovered, 30 to 35 minutes. Sprinkle with cheese and bake 10 minutes more.
    If desired, sprinkle with bacon bits.
