Speedy Tortellini Soup - cooking recipe

Ingredients
    1 Tbsp. oil
    1 medium onion, chopped
    1/2 c. diced carrot
    2 tsp. minced garlic
    2 (13 3/4 or 14 1/2 oz. each) cans chicken broth
    4 oz. cheese tortellini
    1 c. chopped spinach (can be frozen)
    1/2 c. frozen peas
    2 Tbsp. grated Parmesan cheese
    salt and pepper
Preparation
    In a large saucepan, heat oil.
    Add onion, carrot and garlic. Cook, stirring frequently until onion is translucent, about 3 minutes.
    Add chicken broth and bring to boil.
    Reduce heat and stir in tortellini.
    Simmer until tortellini is cooked 5 to 8 minutes.
    Stir in spinach, peas, cheese and salt and pepper to taste.
    Makes 4 servings.
