Double Crispy Chicken - cooking recipe

Ingredients
    7 c. Kellogg's cereal, crushed to 1 1/3 c.
    1 egg
    1 c. milk
    1 c. all-purpose flour
    3 lb. frying chicken pieces, rinsed and dried
    1/2 tsp. salt
    3 Tbsp. margarine or butter, melted
Preparation
    Measure crushed corn flake cereal into a shallow dish or pan. Set aside.
    In small mixing bowl, beat egg and milk slightly. Add flour, salt and pepper.
    Mix until smooth.
    Dip chicken in batter; coat with crushed cereal.
    Place in single layer, skin side up, in greased or foil lined shallow baking pan. Drizzle with melted margarine.
    Bake at 350\u00b0 about 1 hour or until chicken is tender. Do not cover pan or turn while baking.
    Makes 6 servings.
