P.E.O. Bean Soup - cooking recipe

Ingredients
    2 c. bean mixture (can use pre-packaged or create your own mixture of beans)
    water
    2 Tbsp. salt
    2 qt. water
    1 ham hock
    1 bay leaf
    1 large can tomatoes, cut into quarters
    1 large onion, chopped
    1 tsp. chili powder
    1/4 tsp. cumin
    1/4 tsp. oregano
    1/2 tsp. garlic powder
    salt to taste
    juice of 1 lemon
Preparation
    Wash bean mixture and cover with water and add salt.
    Soak overnight.
    Drain and rinse in the morning.
    Place in heavy pot with 2 quarts water, ham hock and bay leaf.
    Bring to rapid boil. Place in crock-pot or continue simmering for 3 hours.
    Then add the remaining ingredients.
    Simmer 1 hour longer and enjoy.
