The Standing Rib - cooking recipe

Ingredients
    4 lb. beef rib roast
    salt and pepper
Preparation
    Place meat, fat side up, in a 15 1/2 x 10 1/2 x 2-inch roasting pan.
    Season with salt and pepper.
    Insert a meat thermometer. Roast in a 325\u00b0 oven until:
    rare, 2 1/2 hours or 140\u00b0; medium, 3 hours or 160\u00b0; or well done, 3 1/4 hours or 170\u00b0.
    Cover with foil to keep warm.
