Ingredients

1 can beets
1 small lemon Jell-O
1/4 to 1/2 c. apple cider vinegar
1/4 to 1/2 c. sugar
Preparation

Drain beets.
Reserve liquid.
Mash or grate beets.
Add water to juice to make 1 1/4 cups.
Add vinegar and sugar to juice; heat to hot, but do not boil.
Dissolve Jell-O in mixture.
Add mashed beets.
Grease pan with Pam.
Pour mixture into pan and chill well.
