Chicken Salad Appetizers - cooking recipe
Ingredients

3/4 c. finely chopped, cooked chicken
1/3 c. finely chopped celery
2 Tbsp. chopped pimento
2 Tbsp. mayonnaise
1/8 tsp. salt
dash of pepper
fresh pea pods (Chinese) or sliced cucumber
Preparation

In a small bowl, combine all ingredients (except pea pods); mix well.
Cover; refrigerate 1 to 2 hours to blend flavors. Spoon or pipe one teaspoonful of filling into each pea pod or pipe one teaspoonful of filling onto cucumber slice.
Yields 2 to 2 1/2 dozen appetizers.
