Crackling Cornbread - cooking recipe

Ingredients
    2 c. cornmeal
    1 tsp. salt
    1 c. cracklings
    1 c. warm water (or enough to make soft dough)
    1 Tbsp. oil
Preparation
    Mix all the ingredients except the oil in a bowl.
    Heat the oil in a cast-iron skillet over medium heat.
    Pour the batter into the skillet, reducing the heat to low.
    Let cook for 12 to 15 minutes, until brown.
    Place a plate over the skillet and turn the skillet over to release the bread.
    Return the bread to the skillet to cook the other side over low heat for 15 minutes more until well browned.
    Or, the bread can be baked for about 35 minutes in the oven at 375\u00b0 instead.
    Cut in wedges to serve. Serves 6 to 8.
