Pumpkin Pecan Harvest Bread - cooking recipe

Ingredients
    1 3/4 c. pumpkin
    4 egg whites
    1/4 c. vegetable oil
    2 c. all-purpose flour
    2 tsp. baking powder
    1 tsp. baking soda
    1 tsp. cinnamon
    1/2 tsp. nutmeg
    1 c. brown sugar
    1/4 c. chopped pecans
    vegetable spray
    1 Tbsp. confectioners sugar (for dusting)
Preparation
    Preheat oven to 350\u00b0.
    In a large bowl, mix together pumpkin, egg whites and oil.
    In another bowl, sift flour, baking powder, baking soda, cinnamon and nutmeg.
    Add brown sugar and mix well. Add the flour mixture to the pumpkin mixture in 2 or 3 stages and combine well.
    Beat with a whisk or electric mixer at medium speed for about 2 minutes.
    Stir in chopped pecans.
