Diet Veal Scallopini - cooking recipe

Ingredients
    1 lb. veal cutlets, sliced for scallopini (approximately 8 pieces)
    2 tsp. all-purpose flour
    1/2 tsp. salt
    1/8 tsp. pepper
    1 Tbsp. margarine
    2 tsp. vegetable oil
    8 oz. mushrooms, sliced (about 2 c.)
    1/2 c. chicken broth
    3 Tbsp. dry white wine
    2 tsp. chopped fresh parsley
Preparation
    Sprinkle veal with flour, salt and pepper.
    In large skillet over medium-high heat, heat butter and oil.
    When butter melts, add veal and cook for 3 minutes on each side.
    Remove to serving platter and keep warm.
    Add mushrooms, chicken broth and wine to skillet.
    Cook until mushrooms are tender and liquid is reduced to a thickened sauce.
    Pour over veal.
    Sprinkle with parsley. Makes 4 diet servings.
