Scandinavian Fruit Soup - cooking recipe
Ingredients

1 1/2 c. dried apricots
1 c. dried prunes
1 c. dried apples
2 cinnamon sticks
1/2 lemon
1 tsp. ground cardamon
1/3 c. quick tapioca
1/4 c. raisins
1/4 c. currants
1 tsp. salt
sour cream
Preparation

Dice first 3 ingredients and cover in large pot with 10 cups of water and stand 30 minutes.
Add the next 4 ingredients.
Bring to a boil; stir and scrape bottom.
Simmer, stirring 10 minutes. Add currants, raisins and salt and allow to cool.
To thin, dilute with apple juice and serve garnished with sour cream.
Makes 6 to 8 servings.
