Beef Bologna - cooking recipe
Ingredients

50 lb. ground beef
2 lb. Tender Quick
1/4 lb. salt
1/2 lb. brown sugar
1 1/2 oz. saltpetre
1 1/2 oz. pepper
2 Tbsp. liquid smoke (if desired)
Preparation

Mix the seasoning together, then add to ground beef and mix thoroughly.
Let set at least 12 hours before canning.
If left in cold place, you can
let set for several days.
Put in cans and cook 3 hours in hot
water
bath or 1 1/2 hours at 10 pound pressure in pressure
cooker.

a little water in each jar before sealing.
