Ingredients

4 Cornish hens
1/4 c. butter or margarine, melted
1 tsp. salt
1/2 tsp. pepper
3/4 c. orange juice
1/2 c. packed brown sugar
1/2 c. Madeira wine, sherry or chicken broth
2 Tbsp. lemon juice
1 tsp. ground mustard
1/4 tsp. ground allspice
Preparation

Tie legs of each hen together; turn wing tips under backs. Place on a greased rack in a roasting pan.
Brush with butter; sprinkle with salt and pepper.
Bake, uncovered at 350\u00b0 for 1 hour. In a saucepan, combine the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes.
Spoon over hens. Bake 15 minutes longer or until a meat thermometer reads 180\u00b0.
