Rhubarb Bread Pudding - cooking recipe
Ingredients

8 slices bread
1 1/2 c. milk
1/4 c. butter
5 eggs, slightly beaten
1 1/2 c. brown sugar
1/2 tsp. cinnamon
1/4 tsp. salt
2 c. diced rhubarb
1/2 c. firmly packed brown sugar
Preparation

Trim crusts from bread, then toast slices.
Cut toast into 1/2-inch cubes.
Place them in 1 1/2-quart casserole.
Scald milk in saucepan.
Add butter and stir until melted.
Pour over toast cubes and let stand 15 minutes.
Combine eggs, sugar, cinnamon, salt and rhubarb.
Stir into bread mixture.
Sprinkle top with brown sugar.
Bake at 300\u00b0 for about 50 minutes or until set.
Top with half and half or ice cream.
