Apricot Cilantro Salad(Serves 4) - cooking recipe

Ingredients
    2 c. bean sprouts, rinsed and drained
    1 (17 oz.) can apricot halves (in syrup)
    3 Tbsp. vinegar
    2 Tbsp. peanut oil
    2 Tbsp. soy sauce
    1 1/2 tsp. ground ginger
    1 qt. shredded lettuce
    1/4 c. minced fresh cilantro
    2 green onions, diagonally sliced
    1 (8 oz.) can water chestnuts, drained and sliced
Preparation
    If using fresh bean sprouts, place them in a colander or large sieve.
    Pour boiling water over them.
    Drain and cool.
