Ingredients

1 c. flour
1/2 tsp. baking soda
1/2 c. margarine or butter
1/2 c. peanut butter
1/2 c. granulated sugar
1/3 c. brown sugar (packed)
1/2 c. shredded carrot
2 egg whites
1/2 tsp. vanilla
1 c. rolled oats
Preparation

In bowl, stir together flour and baking soda.
In large mixer bowl, beat margarine with electric mixer on medium speed for 30 seconds.
Add peanut butter, granulated sugar and brown sugar; beat until fluffy.
Add carrot, egg whites and vanilla.
Beat well.
Add dry ingredients to beaten mixture and beat until well combined.
Stir in oats.
Drop dough by rounded teaspoonfuls, 2-inches apart onto an ungreased cookie sheet.
Bake at 375\u00b0 until done, about 10 minutes.
Remove cookies from cookie sheet and cool on wire rack.
Makes 48 cookies.
