Ingredients

1/2 c. white sugar
1/2 c. brown sugar
1/2 c. shortening (part butter)
1 egg
1/2 c. drained crushed pineapple
2 c. flour
1 tsp. baking powder
1/4 tsp. soda
1/2 tsp. salt
1 tsp. vanilla
Preparation

Cream sugars and shortening.
Beat in egg, then stir in pineapple and dry ingredients.
Drop by teaspoon onto sprayed cookie sheet.
Bake at 375\u00b0 for 10 minutes.
These taste like pineapple upside-down cake.
