Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1/2 tsp. salt
    1/4 tsp. pepper
    1 Tbsp. sugar
    1 egg, beaten
    2 Tbsp. melted oleo
    1 small onion, chopped
    1 c. bread crumbs or crushed saltines
    1 c. grated cheese
Preparation
    Peel and cube eggplant.
    Cook in 3/4 cup water until tender. Drain; add to other ingredients.
    Mix well.
    Pour into greased baking dish.
    Sprinkle 1/2 cup cheese on top.
    Bake 30 minutes at 350\u00b0.
