Morning Glory Muffins - cooking recipe

1 1/4 c. sugar
2 1/4 c. flour
1 Tbsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
1/2 c. shredded coconut
1/2 c. raisins
1 apple, shredded
8 oz. crushed pineapple, drained
2 c. grated carrots
1/2 c. pecans or walnuts
3 eggs
1 c. vegetable oil
1 tsp. vanilla
Preparation

Sift flour, sugar, cinnamon, baking soda and salt into a large bowl.
Add the fruit, carrots and nuts; stir to combine.
In a separate bowl, whisk the eggs with the oil and vanilla.
Pour this mixture into the bowl with dry ingredients and blend well.
Spoon the batter into lightly greased muffin tins.
Fill each cup to the brim.
Bake in preheated 350\u00b0 oven for 35 minutes or until a toothpick inserted into center of a muffin is withdrawn clean. Cool muffins in the pan for 10 minutes, then turn out and finish cooling on a rack.
These muffins need 24 hours to develop their full flavor.
They freeze well.
