Fried Chicken - cooking recipe

Ingredients
    1 (2 1/2 to 3 lb.) chicken, cut up
    salt and pepper
    flour
    cooking oil
Preparation
    Put flour, salt and pepper in paper bag.
    Coat chicken with mixture by shaking bag.
    Place pieces on wire rack and let dry about 15 minutes before frying.
    In 12-inch frying pan, over medium-high heat, brown chicken on all sides in hot oil, turning frequently.
    Reduce heat to medium-low, cover and cook until tender.
    Remove cover for last few minutes to crisp chicken.
