Pralines - cooking recipe

Ingredients
    vegetable cooking spray
    1 1/2 c. sugar
    1/4 c. plus 2 Tbsp. butter
    1 1/2 c. pecans
    3/4 c. brown sugar, packed
    1/2 c. milk
Preparation
    Lightly coat wax paper with vegetable cooking spray; set aside. Combine sugars, butter, milk and pecans in a heavy 3-quart saucepan.
    Bring to a boil over medium heat, stirring constantly. Boil, uncovered, stirring constantly, 1 to 2 minutes or until a candy thermometer reaches 220\u00b0.
    (You may need to lower heat if using a thinner saucepan and rely on the candy thermometer.) Remove from heat and beat mixture with a wooden spoon 4 to 6 minutes or until mixture begins to thicken.
    Drop by tablespoonfuls onto wax paper.
    Let stand until firm.
    Yield:
    2 1/2 dozen.
