Tofu Mushroom Stuffed Baked Potatoes - cooking recipe

Ingredients
    4 medium to large potatoes
    1 1/3 c. chopped onions
    1 1/3 c. chopped mushrooms
    1/2 tsp. sage
    dash of white pepper (optional)
    8 oz. firm tofu, drained and mashed
    3 Tbsp. finely chopped parsley
    1 Tbsp. prepared mustard (spicy or Dijon)
    1/2 tsp. honey
    paprika
Preparation
    Preheat oven to 425\u00b0.
    Bake potatoes for 40 to 60 minutes. Combine onions, mushrooms and sage in skillet.
    Cover and stew 5 minutes over medium heat, until mushrooms become tender and release their juices.
    Season with white pepper.
