Creamed Corn Casserole(Diabetic) - cooking recipe

Ingredients
    1 (15 oz.) can cream-style corn
    1 c. skim milk
    1 egg, beaten
    1 c. cracker crumbs, divided
    2 oz. jar chopped pimento
    1/4 c. chopped onion
    1/4 tsp. pepper
    1 tsp. oleo, melted
    vegetable cooking spray
Preparation
    Preheat oven to 350\u00b0.
    In medium bowl combine corn and milk. Stir in egg.
    Add 3/4 cup cracker crumbs, pimento, onion and pepper.
    Mix thoroughly.
    Pour mixture into 1-quart dish coated with vegetable spray.
    Combine oleo with 1/4 cup crumbs.
    Stir until crumbs are moistened.
    Spread crumbs over corn mixture. Bake 45 to 50 minutes.
