Shrimp Curry Rice Salad - cooking recipe

Ingredients
    1/4 c. finely chopped onion
    1 Tbsp. salad oil
    1/2 tsp. curry powder
    2 c. cooked rice
    1/4 c. chopped green pepper
    1 c. diced celery
    2 c. fresh tiny shrimp (or 1 large can)
    3/4 c. mayonnaise
    salt and pepper to taste
Preparation
    Combine onion, oil and curry powder in a large bowl; stir in rice and mix well.
    Chill several hours or overnight.
    Add rest of ingredients.
    Mix well.
    This salad keeps well and can be made a day ahead.
