Pearl'S Broccoli Soup - cooking recipe

Ingredients
    2 c. cooked broccoli, pureed
    2 Tbsp. butter
    3 Tbsp. flour
    2 c. milk
    2 c. chicken or vegetable broth
    1 tsp. salt
    1/8 tsp. pepper
    1/4 c. Gruyere cheese
Preparation
    Melt butter in large, heavy saucepan over moderate heat. Blend in flour.
    Add liquids and heat, stirring until mixture boils.
    Turn heat to low.
    Stir in puree, seasonings and cheese. Cover and simmer 5 to 10 minutes to blend flavors and melt the cheese.
