Marinated Squash Medley - cooking recipe

Ingredients
    3/4 c. olive oil
    1/3 c. tarragon flavored wine vinegar
    2 Tbsp. finely chopped shallots
    1 clove garlic, minced
    1/2 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. dried thyme
    3 medium size yellow squash, sliced
    3 medium zucchini, sliced
Preparation
    Combine first 7 ingredients in a jar. Cover tightly and shake well.
    Pour dressing over squash. Toss gently. Cover and chill 4 hours.
    To serve, toss again and serve with a slotted spoon. Yields 8 servings.
